Ingredients

  • 200g fresh or frozen raspberries
  • 150g fresh or frozen blueberries
  • 100g fresh or frozen strawberries, hulled and halved
  • Zest and juice of ½ lemon
  • 2 tbsp water (only if using fresh berries)
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. 1Place all the berries in a saucepan over medium heat.
  2. 2Add lemon zest, lemon juice, water (if using fresh berries), vanilla, and salt.
  3. 3Cook, stirring occasionally, for 10-12 minutes until the berries have broken down and released their juices.
  4. 4Gently mash some of the berries with the back of a spoon for a thicker texture, leaving some whole.
  5. 5Remove from heat and allow to cool slightly - the compote will thicken as it cools.
  6. 6Serve warm or cold. Store in an airtight container in the fridge.

Tips for Success

  • The compote thickens as it cools due to natural pectin in the berries.
  • Stores in the fridge for up to 1 week.
  • For a thicker compote, add 1 tsp chia seeds while cooking.
  • Freeze in ice cube trays for convenient portions.
