Ingredients

  • 500g daikon (mooli), peeled and cut into 2cm cubes
  • 1 medium onion, sliced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp garam masala
  • ¼ tsp chilli powder
  • 1 tsp olive oil
  • Fresh coriander for garnish
  • Salt to taste

Method

  1. 1Heat oil in a large pan over medium heat. Add cumin seeds and cook until they start to splutter.
  2. 2Add onion and cook for 5 minutes until golden.
  3. 3Add garlic and ginger, cooking for 1 minute until fragrant.
  4. 4Add all ground spices and stir for 30 seconds.
  5. 5Add diced tomatoes and cook for 3 minutes until softened.
  6. 6Add daikon cubes and 100ml water. Cover and cook for 15 minutes until daikon is tender.
  7. 7Season with salt and sprinkle with garam masala.
  8. 8Garnish with fresh coriander and serve.

Tips for Success

  • Daikon is extremely low in calories - only 18 kcal per 100g.
  • This dish pairs well with cauliflower rice for a complete low-carb meal.
  • The longer it sits, the more the flavours develop.
