Cauliflower Cheese Croquette

A low-carb twist on the classic croquette. Baked not fried, these are crispy on the outside with a cheesy cauliflower centre.

Ingredients

  • 400g cauliflower florets
  • 60g mature cheddar cheese, grated
  • 1 egg, beaten
  • 2 tbsp almond flour
  • 1 clove garlic, minced
  • 1 tbsp fresh chives, chopped
  • ¼ tsp nutmeg
  • Salt and pepper to taste
  • 40g panko breadcrumbs
  • Spray oil

Method

  1. 1Steam cauliflower until very tender, about 10 minutes. Drain well and allow to cool.
  2. 2Mash the cauliflower thoroughly, then squeeze out excess moisture using a clean tea towel.
  3. 3Mix the cauliflower with half the beaten egg, cheese, almond flour, garlic, chives, nutmeg, salt, and pepper.
  4. 4Preheat oven to 200°C/180°C fan/Gas 6. Line a baking tray with parchment.
  5. 5Shape the mixture into 8 small croquettes.
  6. 6Dip each croquette in the remaining beaten egg, then roll in panko breadcrumbs.
  7. 7Place on the baking tray and spray lightly with oil.
  8. 8Bake for 20-25 minutes, turning halfway, until golden and crispy.

Tips for Success

  • Removing moisture from the cauliflower is key to crispy croquettes.
  • For extra crunch, add a tablespoon of grated Parmesan to the breadcrumbs.
  • Serve with a sugar-free tomato dip.
