Ingredients

  • 1 medium cauliflower head (about 500g)
  • 1 tsp olive oil or spray oil
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • Fresh herbs of choice (parsley, coriander) for garnish

Method

  1. 1Remove leaves and cut cauliflower into florets.
  2. 2Pulse the florets in a food processor until they resemble rice grains. Don't over-process or it will become mushy. Alternatively, grate using a box grater.
  3. 3Heat oil in a large non-stick pan over medium-high heat.
  4. 4Add garlic if using and cook for 30 seconds.
  5. 5Add the cauliflower rice and spread in an even layer.
  6. 6Cook for 5-6 minutes, stirring occasionally, until tender but not mushy.
  7. 7Season with salt and pepper.
  8. 8Garnish with fresh herbs and serve immediately.

Tips for Success

  • Don't add water - it makes the cauliflower soggy.
  • For extra flavour, add a squeeze of lemon juice before serving.
  • Works great in stir-fries, as a base for curries, or in burrito bowls.
  • Can be frozen raw - spread on a tray to freeze, then transfer to a bag.
