Ingredients

  • 250g chicken breast mince
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • ½ tsp paprika
  • ¼ tsp cumin
  • Salt and pepper to taste
  • 4 large portobello mushrooms (for buns)
  • 1 tomato, sliced
  • Mixed salad leaves
  • 2 tbsp low-fat Greek yogurt
  • Spray oil

Method

  1. 1In a bowl, combine chicken mince, garlic, parsley, paprika, cumin, salt, and pepper. Mix well.
  2. 2Divide mixture in half and shape into two patties, slightly larger than the mushroom caps.
  3. 3Remove stems from portobello mushrooms and scrape out the gills. Season with salt and pepper.
  4. 4Preheat oven to 200°C/180°C fan/Gas 6.
  5. 5Place mushrooms gill-side up on a baking tray and spray lightly with oil. Roast for 10 minutes.
  6. 6Meanwhile, spray a non-stick pan with oil and cook chicken patties over medium-high heat for 5-6 minutes each side until cooked through.
  7. 7Assemble burgers: place one mushroom cap bottom-side down, add salad leaves, chicken patty, tomato slice, a dollop of Greek yogurt, and top with another mushroom cap.
  8. 8Serve immediately.

Tips for Success

  • Chicken breast mince is very lean - add a tablespoon of grated courgette for extra moisture.
  • Toast the mushrooms gill-side down first for a firmer texture.
  • Make your own chicken mince by processing chicken breast in a food processor.
