Ingredients

  • 500g chicken breast, cut into 3cm cubes
  • 150g low-fat natural yogurt
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp tikka masala paste or powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp paprika
  • Juice of ½ lemon
  • Salt to taste
  • Fresh coriander for garnish
  • Lemon wedges for serving

Method

  1. 1In a bowl, combine yogurt, garlic, ginger, tikka masala, cumin, coriander, turmeric, paprika, lemon juice, and salt.
  2. 2Add chicken pieces and coat thoroughly. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. 3If using wooden skewers, soak them in water for 30 minutes.
  4. 4Thread marinated chicken onto skewers.
  5. 5Preheat grill to high or prepare a barbecue.
  6. 6Grill skewers for 5-6 minutes each side until chicken is cooked through and slightly charred.
  7. 7Rest for 2 minutes before serving.
  8. 8Garnish with fresh coriander and serve with lemon wedges.

Tips for Success

  • The yogurt tenderises the chicken - longer marinating means more tender meat.
  • Don't overcrowd the grill - this causes steaming instead of charring.
  • Serve with cauliflower rice and a cucumber raita for a complete meal.
