Ingredients

  • 2 ripe bananas
  • 400ml semi-skimmed milk
  • 2 egg yolks
  • 1 tbsp cornflour
  • 1 tsp vanilla extract
  • Pinch of cinnamon
  • Pinch of salt

Method

  1. 1Mash one banana until very smooth.
  2. 2In a saucepan, heat milk until just simmering.
  3. 3In a bowl, whisk egg yolks with cornflour until smooth.
  4. 4Slowly pour hot milk into the egg mixture, whisking constantly.
  5. 5Return to the pan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon.
  6. 6Remove from heat and stir in mashed banana, vanilla, cinnamon, and salt.
  7. 7Pour into serving dishes.
  8. 8Slice the remaining banana and arrange on top.
  9. 9Cover and chill for at least 2 hours before serving.

Tips for Success

  • Use very ripe bananas for maximum sweetness.
  • Press cling film directly onto the surface to prevent a skin forming.
  • Top with a few toasted flaked almonds for added crunch.
