Ingredients

  • 100g dark chocolate (70% cocoa), chopped
  • 2 tbsp coconut cream
  • 2 tbsp almond butter
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional toppings: crushed nuts, desiccated coconut, freeze-dried raspberries

Method

  1. 1Melt dark chocolate in a heatproof bowl over simmering water.
  2. 2Stir in coconut cream, almond butter, cocoa powder, vanilla, and salt until smooth.
  3. 3Refrigerate for 30 minutes until firm enough to handle.
  4. 4Roll into 12 small balls using your hands.
  5. 5Roll in your chosen toppings.
  6. 6Place on a lined tray and refrigerate until set, about 1 hour.
  7. 7Store in an airtight container in the fridge.

Tips for Success

  • Use 85% chocolate for even lower sugar.
  • Keep refrigerated - they soften at room temperature.
  • Freeze for up to 2 months.
