Ingredients

  • 100g dark chocolate (70% cocoa)
  • Zest of 1 orange
  • 2 tbsp fresh orange juice
  • 3 egg whites
  • Pinch of salt
  • 1 tbsp stevia or sweetener
  • Orange segments for garnish

Method

  1. 1Melt chocolate in a heatproof bowl over simmering water. Remove from heat.
  2. 2Stir in orange zest and juice. Allow to cool slightly.
  3. 3In a clean bowl, whisk egg whites with salt until soft peaks form.
  4. 4Add sweetener and whisk until stiff peaks form.
  5. 5Fold one-third of egg whites into chocolate to lighten.
  6. 6Gently fold in remaining egg whites until combined.
  7. 7Divide among serving glasses and refrigerate for at least 2 hours.
  8. 8Serve topped with fresh orange segments.

Tips for Success

  • Ensure bowls are completely clean and dry for best egg white volume.
  • Don't overwork when folding - some streaks are fine.
  • Can be made up to 24 hours ahead.
