Ingredients

  • For the dough:
  • 150g self-raising flour
  • 30g vanilla protein powder
  • 150g low-fat Greek yogurt
  • For the filling:
  • 2 tbsp butter, softened
  • 2 tbsp erythritol or sweetener
  • 2 tsp ground cinnamon
  • For the glaze:
  • 50g light cream cheese
  • 1 tbsp milk
  • 1 tbsp powdered sweetener

Method

  1. 1Preheat oven to 190°C/170°C fan/Gas 5.
  2. 2Mix flour, protein powder, and yogurt to form a soft dough.
  3. 3Roll out on a floured surface to a rectangle about 30x20cm.
  4. 4Mix butter, sweetener, and cinnamon. Spread over dough.
  5. 5Roll up tightly from the long edge.
  6. 6Cut into 6 equal pieces and place in a lined baking tin.
  7. 7Bake for 16-18 minutes until golden.
  8. 8Mix glaze ingredients and drizzle over warm rolls.
  9. 9Serve warm.

Tips for Success

  • The 2-ingredient dough (flour + yogurt) is much lighter than traditional.
  • Don't overwork the dough or it becomes tough.
  • Best eaten fresh but can be reheated.
