Ingredients

  • 100g rolled oats
  • 50g desiccated coconut
  • 1 ripe banana, mashed
  • 2 tbsp coconut oil, melted
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 30g freeze-dried raspberries
  • Pinch of salt

Method

  1. 1Preheat oven to 180°C/160°C fan/Gas 4. Line a baking tray.
  2. 2Mix oats and coconut in a bowl.
  3. 3Add mashed banana, coconut oil, honey, vanilla, and salt. Mix well.
  4. 4Gently fold in freeze-dried raspberries.
  5. 5Scoop tablespoons of mixture onto the tray, flattening slightly.
  6. 6Bake for 12-15 minutes until edges are golden.
  7. 7Cool on the tray for 5 minutes before transferring to a wire rack.

Tips for Success

  • Use very ripe bananas for natural sweetness.
  • Freeze-dried raspberries stay crunchy; fresh will make cookies soggy.
  • Store in an airtight container for up to 5 days.
