Coconut Panna Cotta

Ingredients

  • 400ml light coconut milk
  • 100ml unsweetened almond milk
  • 2 tbsp powdered sweetener
  • 1 tsp vanilla extract
  • 2 tsp powdered gelatine
  • 3 tbsp water
  • Fresh berries for serving

Method

  1. 1Sprinkle gelatine over water in a small bowl. Let bloom for 5 minutes.
  2. 2Heat coconut milk and almond milk in a saucepan until just simmering.
  3. 3Remove from heat. Stir in sweetener and vanilla.
  4. 4Add bloomed gelatine and stir until completely dissolved.
  5. 5Pour into 4 ramekins or glasses.
  6. 6Refrigerate for at least 4 hours or overnight until set.
  7. 7Serve in the glass or turn out onto plates. Top with fresh berries.

Tips for Success

  • Light coconut milk keeps calories lower while maintaining creaminess.
  • Don't boil the milk after adding gelatine or it won't set properly.
  • For vegans, substitute gelatine with agar agar.
