Ingredients

  • For the filling:
  • 500g lean beef mince (5% fat)
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 400g tin chopped tomatoes
  • 200ml beef stock
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • For the topping:
  • 500g cauliflower florets
  • 200g potato, peeled and cubed
  • 30g mature cheddar, grated
  • 2 tbsp milk
  • Salt and pepper

Method

  1. 1Brown mince in a large pan, breaking up lumps. Drain any excess fat.
  2. 2Add onion, carrots, and celery. Cook for 5 minutes.
  3. 3Add tomatoes, stock, purée, Worcestershire sauce, and thyme.
  4. 4Simmer for 20 minutes until thickened. Season well.
  5. 5Meanwhile, boil cauliflower and potato until tender. Drain well.
  6. 6Mash with milk and most of the cheese. Season.
  7. 7Preheat oven to 200°C/180°C fan/Gas 6.
  8. 8Transfer mince to a baking dish. Top with cauliflower mash.
  9. 9Sprinkle with remaining cheese.
  10. 10Bake for 20-25 minutes until golden and bubbling.

Tips for Success

  • The cauliflower-potato mix gives creaminess with fewer carbs.
  • Can be assembled ahead and refrigerated before baking.
  • Freeze individual portions for easy meals.
