Ingredients

  • For the crêpes:
  • 100g plain flour
  • 1 egg
  • 250ml semi-skimmed milk
  • 1 tsp vanilla extract
  • Spray oil
  • For the sauce:
  • Juice of 2 oranges
  • Zest of 1 orange
  • 20g butter
  • 2 tbsp powdered sweetener
  • 2 tbsp Grand Marnier or orange liqueur (optional)

Method

  1. 1Whisk flour, egg, milk, and vanilla until smooth. Rest for 10 minutes.
  2. 2Heat a non-stick pan and spray with oil. Pour in a thin layer of batter.
  3. 3Cook for 1-2 minutes each side. Keep warm while making the rest.
  4. 4For the sauce, melt butter in a pan. Add orange juice, zest, and sweetener.
  5. 5Simmer for 5 minutes until slightly reduced.
  6. 6Add liqueur if using and cook for 1 minute more.
  7. 7Fold crêpes into quarters and place in the sauce to coat.
  8. 8Serve immediately, 2 crêpes per person, drizzled with sauce.

Tips for Success

  • Traditional recipes use much more butter and sugar - this is considerably lighter.
  • The alcohol burns off, leaving just the flavour.
  • Garnish with orange segments for extra freshness.
