Ingredients

  • 200g mixed mushrooms (chestnut, shiitake, oyster), sliced
  • 2 eggs
  • 60g rocket leaves
  • 1 tbsp olive oil
  • 1 clove garlic, sliced
  • Fresh thyme leaves
  • Balsamic glaze
  • Salt and pepper

Method

  1. 1Heat half the olive oil in a large pan over high heat.
  2. 2Add mushrooms in a single layer. Don't stir for 2-3 minutes to let them brown.
  3. 3Stir, add garlic and thyme, and cook for another 3-4 minutes until golden.
  4. 4Season with salt and pepper. Transfer to plates.
  5. 5Add remaining oil to the pan and fry eggs to your liking.
  6. 6Place eggs on top of mushrooms.
  7. 7Add rocket to the plates and drizzle with balsamic glaze.
  8. 8Serve immediately.

Tips for Success

  • Don't crowd the mushrooms - they'll steam instead of crisp.
  • A cast iron pan gives the best colour on mushrooms.
  • Add a squeeze of lemon for brightness.
