Ingredients

  • 250g button mushrooms
  • 50g panko breadcrumbs
  • 20g Parmesan, finely grated
  • 1 tsp dried Italian herbs
  • 1 egg, beaten
  • 2 tbsp plain flour
  • Spray oil
  • Salt and pepper

Method

  1. 1Preheat oven to 200°C/180°C fan/Gas 6. Line a baking tray.
  2. 2Mix breadcrumbs, Parmesan, herbs, salt, and pepper in a shallow bowl.
  3. 3Place flour in another bowl and beaten egg in a third.
  4. 4Dip each mushroom in flour, then egg, then breadcrumb mixture.
  5. 5Place on baking tray and spray lightly with oil.
  6. 6Bake for 18-20 minutes, turning halfway, until golden and crispy.
  7. 7Serve with a lemon wedge and garlic yogurt dip.

Tips for Success

  • Pat mushrooms dry before coating for best adhesion.
  • For extra crunch, spray again halfway through cooking.
  • Serve as a starter or side dish.
