Ingredients

  • ½ cucumber, peeled and chopped
  • Juice of 2 oranges
  • Juice of 1 lime
  • 200ml water
  • 1 tbsp honey or sweetener
  • Fresh mint leaves

Method

  1. 1Blend cucumber with orange juice, lime juice, water, and honey until smooth.
  2. 2Strain through a fine sieve for a smoother texture (optional).
  3. 3Place a few mint leaves in each lolly mould.
  4. 4Pour in the cucumber mixture.
  5. 5Insert sticks and freeze for at least 6 hours.
  6. 6Run moulds under warm water briefly to release.

Tips for Success

  • Leaving the pulp in adds fibre.
  • For a creamier version, add 50g Greek yogurt.
  • Great for keeping hydrated during weight loss.
