Ingredients

  • 2 flat iron steaks (150g each), fat trimmed
  • 4 shallots, halved
  • 200g vine tomatoes
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 sprigs fresh thyme
  • 1 clove garlic, crushed
  • Salt and pepper
  • Rocket leaves for serving

Method

  1. 1Remove steaks from fridge 30 minutes before cooking. Season well.
  2. 2Heat half the oil in an ovenproof pan. Add shallots cut-side down.
  3. 3Cook for 5 minutes until caramelised. Add tomatoes, thyme, and garlic.
  4. 4Transfer to oven at 180°C/160°C fan/Gas 4 for 10 minutes.
  5. 5Meanwhile, heat remaining oil in a heavy pan until smoking.
  6. 6Cook steaks for 2-3 minutes each side for medium-rare.
  7. 7Rest steaks for 5 minutes.
  8. 8Drizzle shallots and tomatoes with balsamic.
  9. 9Slice steak against the grain and serve with vegetables and rocket.

Tips for Success

  • Flat iron steak has great marbling but less external fat than ribeye.
  • Resting the meat is essential for juicy results.
  • Use a meat thermometer: 52°C for rare, 57°C for medium-rare.
