Ingredients

  • 3 large egg whites, at room temperature
  • 150g caster sugar (or 100g sugar + 50g sweetener)
  • ½ tsp vanilla extract
  • Pinch of cream of tartar

Method

  1. 1Preheat oven to 100°C/80°C fan/Gas ¼. Line baking trays with parchment.
  2. 2Ensure bowl and whisk are completely clean and dry.
  3. 3Whisk egg whites with cream of tartar until foamy.
  4. 4Gradually add sugar, one tablespoon at a time, whisking well between additions.
  5. 5Continue whisking until stiff, glossy peaks form and sugar is dissolved.
  6. 6Fold in vanilla extract.
  7. 7Pipe or spoon 12 meringues onto the prepared trays.
  8. 8Bake for 90 minutes until crisp and dry.
  9. 9Turn off oven and leave meringues inside until completely cool.

Tips for Success

  • Any trace of fat (from yolks or grease) will prevent egg whites from whipping.
  • Store in an airtight container for up to 2 weeks.
  • Serve with fresh berries and a dollop of Greek yogurt.
